Kitchen | Breakfast Sandwich on Rustic Bread

Sandwiches never need to be bland or boring. There's just so many possibilities with different combinations! 


I came back from a swim this morning and craved a big, filling sandwich, but I hadn't eaten breakfast yet and I like starting my day off with eggs. So I got to rummaging and found red onion, eggs, dijon mustard, Rustic bread, and a very oddly shaped tomato (it looked like a baby red eggplant...should have taken a pic!). 


I like my bread toasty on the outside and soft on the inside...and spruced up. So i cut it in half, drizzled a bit of Extra Virgin Olive Oil, dried basil, and thinly sliced up one clove of garlic. Then I stuck that into the toaster oven to medium-high while I cooked my eggs and it was perfect.


It was delicious! I ate it maybe a little too quickly...too hungry to take more photos. It would have been even BETTER if I had some avocado and maybe some spring mix lettuce.

{Ingredients all from Trader Joe's}
1 Individual Pains Rustica
Red Onion
Tomato
4 Egg whites + half of 1 egg yolk
Dried Basil
1 Clove of Garlic
Extra Virgin Olive Oil
Mustard
Hot Sauce

{Other Ideas}
Avocados
Greens (Spinach, spring mix, etc)
Chicken
Cheese (Mozzarella or Jack)
Fresh Basil
