Kitchen | Breakfast Sandwich on Rustic Bread

Sandwiches never need to be bland or boring. There's just so many possibilities with different combinations! 


I came back from a swim this morning and craved a big, filling sandwich, but I hadn't eaten breakfast yet and I like starting my day off with eggs. So I got to rummaging and found red onion, eggs, dijon mustard, Rustic bread, and a very oddly shaped tomato (it looked like a baby red eggplant...should have taken a pic!). 


I like my bread toasty on the outside and soft on the inside...and spruced up. So i cut it in half, drizzled a bit of Extra Virgin Olive Oil, dried basil, and thinly sliced up one clove of garlic. Then I stuck that into the toaster oven to medium-high while I cooked my eggs and it was perfect.


It was delicious! I ate it maybe a little too quickly...too hungry to take more photos. It would have been even BETTER if I had some avocado and maybe some spring mix lettuce.

{Ingredients all from Trader Joe's}
1 Individual Pains Rustica
Red Onion
Tomato
4 Egg whites + half of 1 egg yolk
Dried Basil
1 Clove of Garlic
Extra Virgin Olive Oil
Mustard
Hot Sauce

{Other Ideas}
Avocados
Greens (Spinach, spring mix, etc)
Chicken
Cheese (Mozzarella or Jack)
Fresh Basil

Home Kitchen | Fried Eggs

I love eggs for breakfast. Egg whites = pure protein = energy that doesn't weigh me down!
The Usual: Egg White Omelet w Organic Cherry Tomatoes, Organic Bell Peppers, Red Onion, White Mushrooms, Fat-Free Feta, Organic Basil, Crushed Red Peppers, Pink Sea Salt. A dash of hot sauce, 1/2 Avocado. Coach's Oats.

The Usual + Soy Mocha Latte and My Brother's Version

My Rendition of Huevos Rancheros: Corn Tortilla, Black Bean Puree, Egg Whites, Avocado, Baby Heirloom Tomatoes, Cilantro, a Spritz of Lemon, Feta Cheese.

Curry Fried Rice Omelet w Ketchup

Quick Fix: Fried Egg Whites + Avocado + Red Onion + Cilantro + Feta + Salt and Pepper

Went home for the weekend, finally...and I DID NOT REALIZE HOW MUCH I MISSED MOMMY'S COOKING!
She's an amazing chef and spoiled my family with new dishes for every meal :]
I always appreciated that my mom would never make us eat leftovers and made new food for us every night for dinner, even though I still ate the leftovers for breakfast the next day since it was so good anyway!

Home Kitchen: Trader Joe's in my Apartment

I live right above Trader Joe's and that is oh-so-good for my palate,  but oh-so-bad for my wallet!!

Home Kitchen | Pumpkin Pie Spice Latte


Woke up this morning with another craving for pumpkin spiced something.

It's another Study Sunday for me (more midterm cramming >.<) so I decided to follow up my Pumpkin Pie Spice list with this pick-me-up.

Blended Pumpkin Pie Spiced Soy Latte


1. Brew favorite coffee
2. Fill small Magic Bullet mug with ice
3. Add a teaspoon of agave nectar 
4. Add half mug of soy milk (with the ice in it)
5. Add pinch of Pumpkin Pie Spice to taste
6. Take 2-3 of the ice cubes from mug and mix with coffee to cool it down before pouring into mug
7. Pour coffee into mug
8. Blend away! Who needs a brother when you've got a blender (note the foam in the cup!)

** May want to add a bit of cinnamon if TJ's pumpkin pie spice is used. Theirs has a tad more ginger, which is great for the pie...but a bit too spicy for a latte!

** Drinking cold coffee with a straw makes me feel like I'm staining my teeth less :]
